Ingredients
- eggs – 2
- onion – 1/2 piece
- garlic – a large clove
- tomatoes – 2 pieces
- olive oil – a tablespoon
- salt, pepper, fresh basil
Directions
- Heat the olive oil and fry the diced onion and garlic on it.
- Scald the tomatoes in boiling water and peel them. Chop into cubes.
- Add tomatoes to the onion (along with the juice and seeds) – fry everything for a while until the excess water evaporates.
- Season to taste with salt and pepper.
- For the tomatoes, beat the eggs and fry until the white is set.
- Sprinkle the finished dish with fresh basil or chives and freshly ground pepper.
- Serve with croutons
