Shakshouka

Ingredients

  • eggs – 2
  • onion – 1/2 piece
  • garlic – a large clove
  • tomatoes – 2 pieces
  • olive oil – a tablespoon
  • salt, pepper, fresh basil

Directions

  1. Heat the olive oil and fry the diced onion and garlic on it.
  2. Scald the tomatoes in boiling water and peel them. Chop into cubes.
  3. Add tomatoes to the onion (along with the juice and seeds) – fry everything for a while until the excess water evaporates.
  4. Season to taste with salt and pepper.
  5. For the tomatoes, beat the eggs and fry until the white is set.
  6. Sprinkle the finished dish with fresh basil or chives and freshly ground pepper.
  7. Serve with croutons
