SKEWERS WITH TOFU

Ingredients

 

  • 1 cube of natural tofu (180g)
  • 120g of red pepper
  • 1/4 smaller zucchini (approx. 200g)
  • 1/2 red onion
  • 2 tablespoons of soy sauce
  • 2 tablespoons of your favorite herbs
  • 2 larger mushrooms (approx. 100g)
  • long toothpicks

Ingredients for 2 servings (2x 6 skewers). Calculated calories per serving.

Directions

1. Cut tofu into cubes, mix with mustard and soy sauce. Leave them for about 15 minutes.

2. Set the oven to 200°C (top and bottom heating).

3. Cut peppers, mushrooms, zucchini and onions into larger pieces.

4. Stuff the prepared ingredients on toothpicks divided in half and place the skewers on a form lined with paper/foil.

5. Sprinkle them with herbs and bake for 10 minutes, then turn them over and bake for another 10 minutes.
