Ingredients
- eggs – 2
- 20g feta type cheese
- 2 tablespoons of wheat flour
- 100g cherry tomatoes
- spinach – 1 handful
- garlic – 1 clove
- rapeseed oil – 1 tbsp
- fresh basil
- salt, pepper
Directions
- Beat the eggs in a bowl with the addition of water, season.
- Fry the spinach with finely grated garlic in oil, taking care not to burn it, then pour in the egg mixture.
- Place the tomatoes cut in half and the crushed feta cheese on top.
- Cover the omelette and leave for a few or a dozen minutes over medium heat until the top is pressed together.
- Serve with fresh or dried basil.
