OMELETTE WITH TOMATOES, SPINACH AND FETA CHEESE

Ingredients

  • eggs – 2
  • 20g feta type cheese
  • 2 tablespoons of wheat flour
  • 100g cherry tomatoes
  • spinach – 1 handful
  • garlic – 1 clove
  • rapeseed oil – 1 tbsp
  • fresh basil
  • salt, pepper

Directions

  1. Beat the eggs in a bowl with the addition of water, season.
  2. Fry the spinach with finely grated garlic in oil, taking care not to burn it, then pour in the egg mixture.
  3. Place the tomatoes cut in half and the crushed feta cheese on top.
  4. Cover the omelette and leave for a few or a dozen minutes over medium heat until the top is pressed together.
  5. Serve with fresh or dried basil.
