BAKED SWEET POTATO WITH MEATBALLS

Ingredients

  • 200 g of minced meat
  • 1 clove of garlic
  • 4 olives
  • 1 smaller sweet potato
  • 20g of feta cheese
  • 2 teaspoons of olive oil
    Spices: salt, pepper, smoked paprika, cinnamon

Ingredients for 2 servings (4 meatballs). Calculations are per 1 serving.

Directions

  1. Chop the garlic and olives. Peel the potato and cut into sticks. Marinate in 1 tablespoon of olive oil, smoked paprika and cinnamon.
  2. Combine the meat with chopped garlic, olives, crumbled feta, salt and pepper.
  3. Form into meatballs and place on a baking tray. Brush each meatball with olive oil. Place sweet potatoes next to the meatballs.
  4. Bake for 20 minutes at 200°C.
